Slow Cooker Pork Lo Mein

This slow cooker recipe is not only easy but delicious. My husband gave it two thumbs up, ate seconds and took the leftovers to work the next day. That’s a huge win in our house. Another win is the fact that this meal was so easy! It only dirtied two dishes in the making of it. I consider that a win as well.

Basically, I am saying you need to make this recipe right away. Do yourself a favor and listen to me.

Ingredients
  1. 2 pounds boneless pork shoulder
  2. 1 pound bag frozen stir fry vegetables
  3. 1 package rice noodles
Sauce
  1. 1/3 cup soy sauce
  2. 3 cloves minced garlic
  3. 2 T brown sugar, packed
  4. 1 T oyster sauce
  5. 1 T fresh grated ginger
  6. 1 t sesame oil
Instructions
  1. In a small bowl whisk together the ingredients for the sauce. Put the roast in the slow cooker and pour the sauce over the roast. Cover and cook on low for 6-8 hours or high for 3-4.
  2. Shred the roast and put it back into the slow cooker. Add the vegetables and cook until tender, about 30-60 minutes. Cook noodles according to package directions. Drain well and toss with everything in the slow cooker. Serve immediately.
