Creamy Spinach Tomato Tortellini

I am always on the search for a new recipe that is easy to throw together in a rush. This recipe is one of those. It takes less than a half hour to get it all ready and my husband gave it his grunt of approval. I made some changes to the original recipe because I didn’t have everything available in my grocery store or at my house.

Ingredients
  1. 1 (20 ounce) package three cheese tortellini (fresh or frozen)
  2. 2 Tbsp butter
  3. 2 cloves garlic, minced
  4. 3 Tbsp all-purpose flour
  5. 1 tsp onion powder
  6. 1/2 cup milk
  7. 1/2 cup heavy cream
  8. 1 (14.5 oz) can petite diced tomatoes (undrained)
  9. 1 1/2 cup fresh spinach or 1 cup frozen spinach
  10. 1/2 tsp oregano
  11. Salt and ground black pepper
  12. 6 Tbsp finely shredded Parmesan or Romano, plus more for serving
Instructions
  1. Cook tortellini according to package directions.
  2. In a large skillet, melt butter over medium heat. Add garlic and saute for 30 seconds, then add flour, onion powder and cook stirring constantly for 1 minute.
  3. While whisking slowly pour in milk and cream, then whisk until smooth. Cook, stirring constantly, until mixture begins to simmer. Then add tomatoes, spinach and oregano. Season with salt and pepper to taste.
  4. Cook several minutes until the sauce has thickened and spinach has wilted. Add cheese and stir until melted. Remove from heat.
  5. Toss prepared and drained tortellini into sauce. Serve with additional cheese if so desired.
