Messy Kennedy

Around here life is crazy, messy and we love every minute!

Yes, I really do like to cook!

Yes, I really do like to cook, but I’m also alright at it!  I still remember the first time I called home and told my parents I had cooked my roommates dinner.  I made my mom’s mostacholi and I think my dad said something to the effect of “And they actually ate it?”.  I was lucky and grew up in a household where my mom was a wonderful cook and she was usually around to make a meal.  If not, I could handle Mac and Cheese or something else simple.

When I went to college, I took a bunch of my mom’s recipes and became the apartment complex mother.  It wasn’t strange for me to feed 10 or more once a week.  The funny thing is, I found out that I really liked to cook.  I started searching for great cooking blogs and websites that I could get a great recipe from.  I still don’t think my dad believes that I really can cook.

Since I’m a new cook I usually learn something new every night that I make a new dish.  For example, my lesson today was:

When you have a 1 pound block of cheese to grate don’t buy a fine cheese grater.  It will take a week for you to finish it all.

Anyone that knows me well will know Chili is one of my favorite foods.  With it being rather cold in Michigan I thought it was a good day to take on the task of making a delicious pot of homemade chili.

Chili getting ready to be simmered and mixed. Doesn’t the pot just look delicious!  Below is my recipe for a wonderful homemade pot of chili on these cold snowy days.  It’s a perfect fit considering Florida is the only state without snow right now.

1 pound of browned burger (I prefer beef but turkey would work too)

15 oz. can of tomato sauce

1 large white onion

3 Roma tomatoes or if you have your own fresh canned tomatoes use those.

1 Jalapeño with the seeds taken out

1 can of Rotel Tomatoes and Chilis

1 can of Kidney Bean

1 can of Pinto Beans

1 can of salsa (homemade and canned is the best but I also like Rotel for cooking)

1 package of chili mix (I prefer hot but you can get medium or mild)

Mix it all together and let simmer for 1 to 2 hours.  This is your end result!

The end result is a delicious bowl of chili!
